4 to 6 chicken breasts, 2 eggs, flour, salt, pepper, sage, rosemary and enough olive oil to get about 1/2 an inch from the bottom of the frying pan.

I cut all of the "funky" stuff off of the chicken breasts and then I cut them into about 3 pieces each or you can cut them into strips. I then put them in a gallon baggie, close the bag and take out my frustrations of the day by beating the chicken with a meat tenderizing hammer (not sure what the technical name is for that). Then dredge all of the flattened out meat in the beaten egg mixture and then a flour mixture of salt, pepper, & sage (if you like sage). I then put the chicken in the hot oil and start cooking. After placing the chicken in the pan, I sprinkle rosemary over the top of the chicken and it flavors the oil and also sticks to the chicken. You don't want the temperature to be so hot that it burns easily. I cook on medium heat and turn them a few times and let them get a golden brown and then place on a couple of paper towels on a plate.

I really struggle with cooking sometimes because it just is not my thing, however, if I find something easy to do and if my family will eat it then I am happy. This is one of their favorites if not their favorite. It is also a good comfort food.
I usually have mashed potatoes, canned green beans (fromm Dad and Pattie's garden of course), corn (since Amanda hates green beans), and hot bread. Yum! Yum! I got this recipe from my mother-in-law and just changed the part where I put rosemary in with the chicken while it is frying. She only uses sage. Since she is Italian, she cooks everything in olive oil and Bruce likes rosemary in everything. I love the flavor myself!
