Ingredients:  
6 Cups diced potatoes
2 Tbls. dry minced onion (1/4 Cup diced fresh onion)
Salt to taste
1 Can cream of celery soup
6 slices cooked bacon, crumbled
1 1/2 to 2 Cups milk
1/4 lb. Velveeta Cheese (or other yellow cheese) sliced

Directions:
Directions:
Cook the potatoes and onion in water to cover until tender.
Add salt, celery soup and bacon. Add milk gradually and heat. Gradually add cheese; stir until cheese is melted. Heat to serving temperature. More milk may be added if thinner soup is desired.
