6 Cups diced potatoes 2 Tbls. dry minced onion (1/4 Cup diced fresh onion) Salt to taste 1 Can cream of celery soup 6 slices cooked bacon, crumbled 1 1/2 to 2 Cups milk 1/4 lb. Velveeta Cheese (or other yellow cheese) sliced
Cook the potatoes and onion in water to cover until tender. Add salt, celery soup and bacon. Add milk gradually and heat. Gradually add cheese; stir until cheese is melted. Heat to serving temperature. More milk may be added if thinner soup is desired.
