1 1/2 c. lentils
2/3 c. parsley, chopped
1 T. basil
1 t. thyme
1 t. savory
1-2 green peppers, chopped
1-2 onions, finely minced
1/4 c. safflower oil
1/4 c. olive oil
1/2 c. tarragon vinegar
1 T. fresh mint, chopped

Directions:
Directions:
Place lentils in water to cover. Cook until tender, yet firm to bite, approximately 30 minutes.
Combine all ingredients and marinate several hours, or overnight.
