1 c all purpose, unbleached flour
4 eggs
1/4 c melted butter
1/2 t salt
1 3/4 c milk

Directions:
Directions:
Combine the flour, eggs, melted butter, salt and milk in a food processor or blender and process until smooth. Add more milk, if necessary so that the batter has a consistency of light cream. Chill for at least 30 minutes.

To cook crepes, heat a small, non-stick frying pan (or omelet pan) and melt a teaspoon of butter in the pan. Spread the butter to cover the bottom and part of the sides of the pan. Pour a little less than 1/4 c of batter into the pan and quickly tip the pan, moving it in a circular fashion to evenly spread the batter over the bottom and sides. Cook over medium heat for about 2 minutes. Then flip the crepe and continue cooking for 30 seconds. Remove the crepe to a plate and fill with filling of choice.

Crepes can be frozen, unfilled and used later. Place waxed paper between layers of crepes before freezing.

Makes: 24-26 crepes
