3 large garlic cloves
3 c. chopped tomatoes (28 oz)

Directions:
Cook pasta according to package directions; drain, rinse and set aside. Heat large sauce pan over medium high heat; add sausage, onion, and garlic, cooking for about 10 minutes. Add tomatoes with liquid and basil; simmer 10 more minutes until sauce thickens slightly and tomatoes are cooked. Stir in cup Parmesan cheese and 2 tbsp. olive oil, pasta, spinach and mozzarella. Transfer mixture to lightly oiled 9x13x2 pan. Sprinkle with 2/3 cup Parmesan cheese. Bake for about 30 minutes in preheated 375 oven until sauce bubbles and cheese melts.

NOTE: May substitute 3/4 tsp. garlic powder for fresh garlic. May also use cup dried basil for fresh basil.
