2 eggs
1/2 small onion (increase, if desired)
1 t salt
2 T flour
1/4 t baking powder
3 cups cubed potatoes, uncooked
dash pepper

Directions:
Directions:
Put eggs, onion, salt, flour, baking powder and 1/2 cup potato cubes into blender. Cover and process on grate setting, until potatoes are grated. Add remaining potatoes, cover and process at chop setting only, until potatoes have been processed. Use a rubber spatula, as necessary, to guide potatoes into blade. Do not overblend.

Preheat griddle to 380. Grease griddle lightly. Pour mixture onto hot griddle in desired size. Fry until golden brown on both sides. Drain on paper towels.

Makes: 16 medium latkes
