5 lbs sweet potatoes
1/3 c packed brown sugar
4 T butter
1/4 t salt
1/4 c milk (may not be necessary)
1 bag miniature marshmallows

Directions:
Directions:
Clean potatoes and place in pot of water. Bring to boil and continue boiling for 40 minutes or until done. Remove from water and let cool slightly in colander so they can be handled. Make sure they are not sitting in any water.

Take each potato and peel off skin by using edge of knife (it will peel easily). Place peeled potato in large mixing bowl. Add brown sugar, butter and salt and mash. If needed, add some milk. However, you do not want them soupy, so milk may not be needed.

Once mashed, place in baking dish that has been coated with cooking spray. Spread out evenly. Add layer of marshmallows on top.

Bake at 350 until tops of marshmallows begin to brown.
