1/2 c butter, softened
1/4 c firmly packed dark brown sugar
1 egg, separated
1 c all purpose flour
1 c finely chopped unsalted peanuts
1/2 c grape jelly

Directions:
Directions:
Preheat oven to 300. Lighly grease cookie sheet.

In a medium bowl cream the butter and brown sugar until light and fluffy. Add the egg yolk, the flour and beat until well blended.

Lightly beat the egg white. Using a rounded 1/2 teaspoon measure of dough, form into a ball. Dip each ball into the egg white and then into the chopped peanuts.

Place the balls on the cookie sheet and using your fingertip, make a small depression in each one. Bake for 5 minutes, then remove the cookie sheet from the oven and press the centers again. Return cookies to oven and bake for additional 20 minutes. (Check after 15 minutes to make sure they are not browning too rapidly.)

Cool completely and fill centers with grape jelly.
