1 lb zucchini (3 medium), unpeeled & grated
1 T minced fresh parsley
1 t minced fresh chives
1 C buttermilk pancake mix
1 egg, beaten
1/4 t salt
1/4 t pepper
1/2 c vegetable oil

Directions:
Directions:
Combine all ingredients except oil, stirring well. Heat oil to 375 and drop mixture by tablespoon fulls into oil. Cook until golden brown, turning once. Drain on paper towels.
