Ingredients:
Head of cauliflower, cut into florets
3 eggs, scrambled
3 T water
3 c seasoned bread crumbs
1/2 c grated Parmesan cheese

Directions:
Directions:
Bring water to a boil and then steam cauliflower for 8 minutes. Cool slightly so you can handle it.

Roll into scrambled eggs/water mixture and then into breadcrumbs that have been mixed with the Parmesan cheese.

Fry on stovetop in canola oil until browned on all sides. (Once oil is warm, turn to medium-low, or cauliflower will brown too quickly.)

Drain onto paper towels and then place in casserole to keep warm.

NOTE: For an easier way, simply buy 1lb bag of frozen cauliflower. Let it thaw in the refrigerator. When thawed, dredge in egg and continue with recipe above to complete.
