Ingredients:  
1 lb elbow macaroni
2 big spoonfuls of mayonnaise
3 stalks celery, sliced thin
1 small onion, finely diced
4-5 small sweet gherkin pickles, finely diced
1/8 c juice from bottle of pickles
1 pimento diced thin (optional - for color)
2 large carrots, peeled and grated
small can of white tuna, drained and shredded (if desired)
salt & pepper, to taste

Boil pasta until just barely done. Drain and cool. Add mayonnaise and remaining ingredients in order. Mix well and allow to chill through before serving so flavors blend.
