4 lbs small white onions (cleaned and peeled-dry well)
1 lb butter
2 tbs. granulated sugar
1/4 teaspoon cornstarch
2 tbs. tarragon vinegar

Directions:
Directions:
Clean and peel four pounds small white onions and dry well. In heavy saucepan (select one with cover) boil 1 lb. butter with 2 tbs. granulated sugar and 1/2 tsp. cornstarch. Let this get brown; then add 2 tbs. tarragon vinegar, more butter if necessary. Put onions in the mixture and cover. Cook 1/2 to 3/4 hr. stirring occasionally.
