1 lb lean boneless pork, cut into 1/2 cubes
1 T finely shredded orange peel
1/2 c orange juice
2 T soy sauce
2 t cornstarch
1 t brown sugar
1/2 t ground ginger (or 1/2" fresh ginger root, peeled and minced)
2 large carrots, peeled and thinly sliced
2 stalks celery, chopped (1 cup)
2 T peanut oil
1/4 - 1/2 c cashews

Directions:

Combine orange peel, orange juice, soy sauce, corn starch, sugar and ginger. Set aside.

In wok or large skillet on high heat, stir fry carrots and celery in 1 tablespoon hot oil for about 4 minutes or until crisp tender. Remove from pan and set aside.

Add remaining 1 tablespoon oil to pan and stir fry pork for 4-5 minutes, until browned (add more oil, if necessary). Add juice mixture and cashews and cook until thickened and bubbly. Return vegetables to pan, cover and heat through 1-2 minutes. Serve over cooked rice or noodles.
