5 lbs ground beef (not lean)
5 teaspoons Tender Quick
2 1/2 teaspoons cracked black pepper
(fresh ground if you prefer)
2 1/2 teaspoons mustard seed
2 1/2 (or less) teaspoons garlic salt (less if powder)
1 teaspoon Hickory Smoke salt

Directions:
Directions:
Combine ingredients for three minutes. Cover and cool 3 days (refrigerated). Note: Mix each day for three minutes.
After the three days of mixing and refrigerating make into 4 - 6 rolls. Place on rack in oven for 8 hours at 180 - 200 degrees. Cool, refrigerate. Can be frozen.
