6 cups pared, cored apple slices (1/4" thick)
2/3 c granulated sugar
1/4 t nutmeg
1/8 t salt
1/4 t cinnamon
1 t lemon juice
1 T butter
Crust for 2-crust 9" pie

Directions:
Directions:
Line a 9" pie plate with one crust. Fill with apples. Mix dry ingredients - sugar, salt, nutmeg and cinnamon, sprinkle over apples. Then sprinkle lemon juice over apples. Cut up butter into small 1/2" cubes and place over top of apples.

Place second crust on top and seal edges. Cut vent holes or slices in top crust. Bake at 425 for 40 minutes. Check pie after 20 minutes and place aluminum foil over edges of crust if browning too much.

NOTE: best apples are Empire, Northern Spies or Rome. Granny Smith apples will be a bit tart. Delicious apples will be too dry and McIntosh will be too moist.
