Italian Veal in Wine Recipe

1 1/2 pounds veal stew meat
3 T. olive oil
3 T. butter
salt and pepper
1 large onion, finely chopped
1 clove garlic, mashed
1 c. dry white wine
1/4 t. dried oregano
1/4 t. crushed rosemary
1/2 # fresh mushrooms, sliced thinly
1 8oz. can pitted black olives
steamed rice

Cut veal into 1 inch cubes. Dust with flour and brown on all sides over medium heat in 2 tablespoons each of butter and oil in a heavy dutch oven. Season with salt and pepper and set aside.
Saute garlic and onion in remaining oil and butter in dutch oven. Add veal, wine, oregano and rosemary. Cover and simmer for 30 minutes. Next, add mushrooms and simmer for 30 minutes longer. Add olives for the last 2 to 3 minutes
to heat through. Serve hot over steamed rice.
May substitute chicken broth for wine.
