6-8 baking potatoes
2 T butter
1 medium onion, diced
2 T flour
salt and pepper, to taste
3 c milk
2 c Velveeta cheese
3/4 c bread crumbs
1/4 grated Parmesan cheese

In a large pot, place butter and diced onions. Simmer for 15 minutes. Add flour, salt and pepper.

Meanwhile, in blender mix milk and Velveeta cheese. Add this to pot and heat until warm.

Peel potatoes and slice to 1/8" thick and layer in a 13" x 9" casserole so that it fills the casserole approximately 3/4 of the way.

Pour heated ingredients over potatoes. Mix together bread crumbs and Parmesan cheese and sprinkle on top. Bake at 375 for 1 1/2 hours.
