2 lbs. lean hamburger meat
2 Tbls. Mortons salt cure seasoning (or Mortons Tender Quick)
1/2 tsp. onion powder
1/4 tsp. garlic powder
2 tsp. mustard seed
1 Tbls. coarse ground pepper

Directions:
Directions:
Mix all ingredients together. Mix well. roll into 3 logs, 2x6 inches. Wrap in plastic wrap. Refrigerate for 24 hours. REMOVE WRAP. Bake on a pan that has a rack or bake on an oven rack. Be sure to put a pan under the rack to catch drippings. Bake 2 hours at 250 degrees. Turn meant 1-2 times while cooking.
Wrap in Saran Wrap and store in fridge.
