3 1/2 c. oil
1 t. salt
2 to 3 T fresh lemon juice
1/4 t. cayenne pepper

Directions:
Directions:
In a mixer bowl beat eggs well. Continue beating and gradually, very slowly, add oil and beat until thick. After adding half the oil, add lemon juice, then the remaining oil. Continue beating about 3 minutes. Cover and store in the refrigerator.

It mayo separates break another egg in another bowl and start over using oil and egg mixture to mixture that has separated. Don't forget the additional 3 minutes at the end. This keeps mayo emulsified.

This was Pawpaw's favorite on crackers with fresh tomatoes. After I married Ray I was so proud to make homemade mayo and he informed me he only like Miracle Whip.
