3 egg yolks
2 1/2 T lemon juice
1/4 t.salt
dash of cayenne pepper
1 stick butter, heated to bubbling in microwave

Directions:
Directions:
1. Place egg yolks in blender jar.Cover and blend at high speed for 2 minutes. Add salt and pepper and blend. Uncover blender and pour in about 3 T. butter very slowly. The heat of the butter warms and cooks the egg yolks, and by pouring in slowly, you are giving the yolks time to absorb the butter.
2. Alternate adding the remaining butter and lemon juice by pouring into blender in a slow continuous stream. Finished sauce should be about the consistency of thick cream.
