3 cups milk
3 Tbsp tapioca
1/2 cup sugar
1 egg yolk
1 Tbsp butter
1 tsp vanilla

Directions:
Directions:
Put milk, tapioca and sugar in 2 quart vicrowavable bowl. Microwave on high for 18 minutes, stirring every 2 minutes, or more often as mixture bubbles to the top of the bowl. Meanwhile, beat the egg yolk in a small bowl. When the milk mixture is finished, slowly drizzle about 1 1/2 cups of the hot milk into the egg yolk while beating the egg yolk. Pour the egg mixture back into the milk mixture and stir until combined. Microwave on HI for 2 minutes, then stir in the butter and vanilla.
