Crust:
2 1/2 cups - Ritz Crackers(crushed)
1 stick - Butter(softened)
Filling:
2 pkg. - French Vanilla Instant Pudding
2/3 c. - Shredded Coconut
1 1/2 c. - Cold Milk
1 quart - Butter Pecan Ice Cream(softened)
1 lg. container - Cool Whip

Crust:
Crush crackers and set aside 1/2 c..
Mix remaining 2 c. of crackers with the butter and press into the bottom of a 9"x13" pan.
Filling:
In a lg. bowl and using a mixing spoon...mix together the pudding, milk, coconut, and ice cream. Pour into crust , cover pan, and seal well. Freeze until firm. When firm, remove from freezer and top the filling with the Cool Whip, spreading to cover. Then sprinkle this with the reserved 1/2 c. of crumbs. Recover pan and seal tightly. Freeze overnight(minimun of time). Remove from freezer 3 1/2 hrs. before serving!

This "no bake", "make ahead" recipe can be made up to 4 days ahead of serving time...great for those hot summer days when you need a great dessert, but hate to turn on the oven!
