5 c. potatoes, boiled and cubed
1/4 c. water
1/3 c. oil (vegetable or corn)
2 1/2 T. vinegar
3 T. sugar
1 c. onion, shredded
1/4 c. celery, finely chopped
1/4 c. green pepper, shredded
salt & pepper to taste

Mix the water, vinegar, oil, sugar, salt and pepper. Pour over the mixed vegetables. Stir together and chill and let season overnight. May be served warm or cold.

Some people like boiled eggs in an oil salad, but my mother never used eggs in her salads made with oil Red potatoes are more moist. You may add more oil if the salad seems too dry, depends on the potatoes.
