2 eggs
1 c. Sugar
2 c. cold mashed potatoes(mashed with milk and butter)
3/4 c. buttermilk
2 T. butter,melted
1 tsp. vanilla or almond extract
4 1/2 c. flour
4 tsp. baking powder
1 tsp. salt
2 tsp. nutmeg
1/8 tsp. ginger

Directions:
Directions:
In bowl, beat eggs and sugar. Add potatoes, buttermilk, butter and vanilla; mix well. Combine flour, baking powder, baking soda, salt, nutmeg ginger; add to egg mix and mix well. Cover and refrigerate 1-2 hours. On a floured surface, roll dough to 1/2 inch thickness. Cut with a 2 1/2 inch doughnut cutter. In a skillet or deepfat fryer, heat oil to 375. Fry doughnuts for 2 min on each side or until browned. Drain on paper towels. Roll in sugar if desired.
