1 bunch broccoli
1/2 cup butter
1 medium onion, chopped
1/2 cup flour
2 cups milk
2 cups grated medium cheddar cheese or sharp cheddar cheese
2 cans chicken broth
salt and pepper

Directions:
Directions:
1. Cook broccoli until tender& drain.
2. Cook onions in butter until tender& transparent.
3. Stir in flour& cook 5 minutes, stirring constantly.
4. Add milk slowly, stirring constantly.
5. Stir in grated cheese until smooth.
6. Slowly blend broth into sauce.
7. Puree 1/2 cup of the broccoli with a fork (or in the food processor).
8. Cut the rest of the broccoli into pieces.
9. Add all broccoli to the soup.
10. Simmer 15 minutes.

The original recipe called for you to also add Velveetta cheese. I am not a fan of Velveetta so I have never used it in this recipe, but if you choose to use it only use one cup of cheddar, The Velveetta is to taste and desired consitancy. You add it after step six.
