3 T butter
1 1/2 c graham crackers
2 T sugar or honey
dash salt
3 eggs
1 c sugar
1 1/2 lb cream cheese
1/2 pint heavy cream
3 T flour
1 t vanilla

Mix together in an 8 or 9 inch spring form pan, the butter, 2 T sugar or honey, graham cracker crumbs and dash of salt. Pat on sides and bottom of pan. Set aside.

Separate three eggs. Let the whites come to room temperature. Mix yolks with sugar, cream cheese and heavy cream. When smooth add flour, vanilla and dash of salt. Beat eggs whites to a very stiff consistency, with formed peaks. Fold into creamed mixture. Pour on top of crumb crust and bake in 325 oven for 25 minutes. Remove from oven for 10 minutes. Return to oven for 12 minutes more. Let cool on wire rack and then refrigerate for at least 6 hours.
