1 tablespoon extra virgin olive-oil
1 cup chopped yellow onion
5 eggs
8 oz. shredded Monterey Jack cheese
8 oz. cottage cheese
2 tablespoons melted butter
1/2 teaspoon coarse salt
1/4 teaspoon freshly ground pepper

Preheat oven to 400. Lightly coat a 9-inch quick or pie pan with a nonstick vegetable spray.

Heat a medium nonstick skillet over medium heat for 1 minute. Add the olive oil and swirl the pan to coat the bottom evenly. Add the onion and saute for 10 minutes, stirring occasionally.

Whisk the eggs in a medium bowl until well blended. Add the sauteed onions and the rest of the ingredients and blend well.

Pour the mixture into the prepared pan. Bake for 15 minutes. Reduce oven temperature to 350. Bake for 30-35 minutes or until set in the center and golden brown on top. Cool at least 10 minutes before serving.

This no-crust quiche is one of our favorites - easy with ingredients I can keep on hand, good out of the oven and cold the next day.
