2 c cooked chicken
2 T vegetable oil
2 c thinly sliced celery
1 1/2 c sliced onions
1/4 t pepper
2 c chicken broth
large can mixed vegetables
1 4oz can mushroom caps
2 T cornstarch
3 T soy sauce
3 scallions
1 5oz. can fried noodles

Directions:
Directions:
Brown chicken slightly in vegetable oil. Add celery, onions and pepper. Add chicken broth and cook, covered, until vegetables are tender. Add drained mixed vegetables and drained mushrooms and heat to boiling. Mix cornstarch with the soy sauce and add to the hot mixture, stirring constantly. Let simmer 2 minutes or until slightly thickened. Serve garnished with fried noodles, and scallions that have been cut lengthwise (if desired).
