12 eggs
3 c sugar
3 t vanilla
3 lbs ricotta cheese
3 T cornstarch
2 cans evaporated milk

Directions:
Directions:
Preheat oven to 325. Beat eggs in mixer until blended. Add sugar and beat for 10 minutes. Add vanilla. In separate bowl, mix cornstarch into ricotta cheese. Add to egg/sugar mixture, blending well. Add evaporated milk. Pour into baking dish that has been coated with butter and plain bread crumbs. Cook for approximately 1 hour or until middle is set. (Check after 40 minutes. If browning too much, cover with foil and continue baking until middle is set.)
