1 c water
1/2 c uncooked medium-grain rice
1 tbsp rice vinegar
1 tsp grated lemon peel
1/2 tsp sugar
1/2 tsp salt
3 or 4 romaine leaves
1/4 c mayonnaise
2 tsp lemon juice
1/4 tsp ground ginger
1/2 c 3/4 x 1/8" strips vegetables (bell pepper, carrot, radish cucumber etc)
18 cooked small shrimp

Directions:
Directions:
1. heat water to boiling in 2 qt sauce pan. Add rice, reduce heat to low. Cover and simmer about 20 min. Cool slightly. Refrigerate about 30 min or until chilled. Stir vinegar, lemon peel, sugar and salt into chilled rice.
2. Cut and discard center ribs from romaine leaves. Cut leaves into strips, about 5" long and 3/4" wide. Mix mayonnaise, lemon juice and ginger; spread on each romaine strip.
3. Spoon about 1 tbsp rice mixture over each strip. Place 3-4 vegetable strips on center. Roll up; secure with toothpick. Top each with 1 shrimp. Refigerate at least 2 hrs before serving.
