Ingredients:  
1/2 C. shortening
1 C. sugar
2 eggs, slightly beaten
1/2 C. milk
1 1/4 C. flour
1 t. baking powder
1/2 t. salt
1/2 C. finely chopped nuts
Grated rind from one lemon (save juice for topping)

Directions:
Directions:
1. Cream shortening & sugar, then eggs.
2. Sift together flour, baking powder,& salt. Add alternately with milk.3. Add nuts & grated lemon rind, mix and pour in loaf pan.
4. Bake at 350 for 1 hr.
5. Remove from pan & pierce with a skewer or fork.
6. Top with lemon juice mixed with 1/4 C. sugar
7. Cool before serving
