5-6 carrots, cooked and mashed (2 cups)
1/4 cup sugar (or less)
1/4 stick butter
1 cup milk
2 teaspoons cinnamon
1/2 cup coconut (optional)
2 eggs
1 teaspoon baking powder
1/2 cup pecans (chopped)

Directions:
Directions:
In a food processor mix everything except nuts and coconut. Stir them in and pour mixture into buttered casserole. Cover and bake 40 minutes at 350 or until somewhat firm in the center.
