2 cups dry lentils
8 cups water
3 slices bacon, diced, or turkey bacon, or chicken sausages
1 medium onion, chopped
1/2 cup chopped celery
1/2cup chopped carrots
1 clove garlic, minced, or more if you like garlic
2 1/2 teaspoons salt, (I cut back to 1 1/2 teaspoons)
1/4 teaspoon pepper, (I increased to 1/2 teaspoon)
1/2 teaspoon oregano, crushed
3 tablespoons snipped parsley, if desired

Rinse lentils; drain. Place in large soup kettle with remaining ingredients. Cover and simmer about 2 1/2 to 3 hours.
