8-9 yellow squash, thinly sliced
1 medium sweet onion, chopped
1 can cream of mushroom soup
1 1/2 cups cheddar cheese
2 eggs, beaten
6 T. margarine, melted
1 sleeve Ritz crackers
Additional cheddar cheese

Directions:
Directions:
Stew squash and onions until very tender. Mash and add all other ingredients except crackers and additional cheese. Pour into a 2 quart casserole and top with crushed crackers and cheese. Bake at 350 degrees for 30 minutes.
