2 - Loaves day old bread
2 c. - Diced celery
1 c. - Butter
2 tsp. - Salt
2 tsp. - Poultry Seasoning
2 T. Chopped onion
1/8 tsp. - Black seasoning

Directions:
Directions:
Pull bread from crust, crumble into fluffy crumbs. Sauté celery in butter for 5 minutes, add crumbs, onions, and seasonings. Toss in butter over heat until crumbs are coated and mixture is light and fluffy. Stuff turkey(14 - 15 lbs) lightly with dressing, lace and truss. Brush generously with 1/2 cup butter, melted. Place in open roasting pan. Cover with cheesecloth dipped in melted butter. During baking period baste the turkey frequently with butter that collects in the bottom of the pan.
