"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
This recipe for Sweet & Sour Onions, by Lydia Brown, is from Lydia's Cookbook Project,
one of the cookbooks created at FamilyCookbookProject.com. We help
families or individuals create heirloom cookbook treasures.
1 lb. small boiling onions 1tbs butter or olive oil 2 3/4 tbs sugar 1/2 cup balsamic vinegar 1/2 cup water salt & pepper to taste
Parboil the onions in enough water to cover for about 3 minutes. Drain and let sit until cool enough to handle. Cut the roots off and peel the onions, making sure to remove all papery layers. Cut an "X" into the root end. Mix the rest of the ingredients and bring to a boil with the cleaned onions. Simmer until the liquid is somewhat reduced.
