2 c. cornmeal 1 egg, beaten 1 Tbsp. flour 1 c. buttermilk ½ tsp. baking soda 1/3 c. finely chopped onion 1 tsp. salt Oil .
Mix together dry ingredients. Stir in egg, buttermilk, and onion. Pour oil ½-inch deep in skillet and heat to 400 degrees. Drop batter by spoonfuls into oil and dry, turning occasionally. Drain on paper towels and serve piping hot
Recipe makes about 20 hush puppies, depending on size of spoonfuls
