1 cup oil
2 eggs
2 cups dried apples re-hydrated in
1 cup water, cut up a little after re-hydrating
1 tsp. cinnamon
2 cups sugar
1 cup pecans or walnuts
1 tsp. vanilla
2 1/4 cup all-purpose flour
1 tsp. baking soda
1 tsp. salt

Directions:
Directions:
Mix oil and eggs together. Add remaining ingredients and mix until combined. Bake at 325 in 2 medium bread pans about 40 minutes or until toothpick inserted in center comes out clean.
