1 bag baby spinach (washed & dried)
4 ounces fresh mushrooms, sliced
1/2 red onion, chopped
1/2 cup slivered almonds, toasted
1 hard boiled egg, chopped
1 T. real bacon pieces or 2 slices cooked & crumbled
1/2 cup grated Parmesan cheese (the kind in the dairy section, not the Italian shaker kind)

Dressing:
1/4 cup rice vinegar
1/4 cup olive oil (or bacon drippings if you prefer)
3/4 cup white sugar

Directions:
Wash dry spinach. Heat the vinegar and sugar until the sugar dissolves, add the oil, pour over salad and toss.

I normally double the dressing recipe & I put extra crumbled crispy bacon pieces in with it. Pour on the dressing gradually and toss in between til you get the amount of dressing you want. Variations include adding mandarin orange sections or sliced strawberries in season.
