8 slices bacon, chopped
6 ribs celery, chopped
8 leeks, sliced
4 large potatoes, peeled and sliced
3 quarts chicken broth or stock, divided
2 teaspoons salt
4 cups light cream
1-3 Polish sausages, cooked and sliced
Chives for garnish

Directions:
Directions:
Saute bacon in heavy, large pot until transparent. Add celery and leeks. Cover and steam for 10 minutes. Add potatoes, 2 quarts stock and salt. Cook until potatoes are tender. Cool slightly. Puree in batches in blender or food processor. Then add rest of stock, cream and sausage. Season to taste with salt and pepper. Heat slowly and serve garnished with chives.
