2 cups orange juice. 1/4 (packed) dark brown sugar. 1/4 cup soy sauce. 1 Tbsp. Tamarind concentrate. 3 garlic cloves, crushed. 1 1/4 inch-thick slice jalapeņo Chile. 1/8 tsp. Chinese five-spice powder. 1/2 tsp. grated orange peel.

Boil orange juice and sugar in heavy medium saucepan over medium-high heat until reduced to 2/3 cup. stirring often about 12 minutes. Add soy sauce, tamarind, garlic, Chile and five spice powder. Simmer over medium low heat until reduced to generous 1/2 cup. Stirring frequently, about 7 minutes. Strain into small saucepan. Mix in orange peel.

Tamarind concentrate, a seedless paste, is available at Middle Eastern, Indian and some Asian markets. Glaze Sauce can make ahead. serve hot over Duck, Chicken or Lamb.
