Cake:
1 1/2 c. - Flour
2 tsp. - Baking Powder
1/2 tsp. - Salt
6 tsp. - Sugar
1/2 c. - Cream
1 - Egg
2 - Apples (MacIntosh or Rome work well)
Topping/Sauce:
1 c. - Hot Water
1 c. - Sugar
2 tsp. - Butter
1 tsp. - Lemon Juice
2 tsp. - Flour

Directions:
Directions:
Preheat Oven to 400 degrees. Grease an 8"sq.pan.
Cake: Sift the flour, baking powder, salt, and sugar into a mixing bowl. Measure the cream in a lg. glass measuring cup. Add the egg to the cream, mix well, and then add to the "dry" ingred. in the bowl. Beat until smooth. Pour into greased pan.Core, peel, and slice apples. Arrange then in rows on top of cake. Bake for approx. 35min. Cool pan on wire rack.
Topping/Sauce: In a pan on stovetop, add first 4 ingred.. Over med. heat. Stir rapidly until it comes to a boil, add lemon juice, and continue stirring rapidly for 2 min. or 'til thickens and is of a sauce consistency. Slice cake into squares. Remove squares to serving plates and ladle a little sauce over each square.

My mother, Ann Minnegan, was known for her delicious desserts and this is her recipe. She used to "whip up" this cake, while the rest of the dinner was cooking, so the cake was still warm when served! Today, we can make this cake and sauce ahead of time and simply warm them up separately in the microwave (just be sure the dishes are covered and microwave safe)!
