2 tbsp olive oil
2 tbsp minced garlic
1 1/2 tbsp minced shallot
2 lb ripe tomatoes, peeled and chopped
1/4 cup slivered basil
2/3 cup chicken stock
salt to taste
pepper to taste
5 slices stale Italian bread
chopped basil, fresh, for garnish
Parmesan cheese (optional)

Directions:
Directions:
1. Heat the olive oil in a large saucepan.. Saute the garlic and shallots in the oil until soft and translucent, 10 minutes.

2. Add the tomatoes, basil, stock, salt and pepper. Stir and simmer for 15 minutes.

3. Tear or break the bread and add to the soup. Let it cook in the soup until it is absorbed and becomes a sort of pap. Serve garnished if desired.

I have used canned crushed tomatoes and it works very well.
