3 tsp curry powder
1 1/2 tsp salt
1/4 tsp pepper
6 chicken breast halves, boned and skinned
1 1/2 cups orange juice
1 cup rice
3/4 cup water
1 tbsp dry mustard
chopped parsley, for garnish

Directions:
Directions:
Combine curry powder, 1/2 tsp salt and pepper and rub into all sides of the chicken. In a 10" skillet combine remaining ingredients except the parsley, mixing well. Arrange chicken over all and bring to a boil. Lower heat, cover and simmer for 20 minutes. Remove from heat and let stand until liquid is absorbed, about 5 minutes. Sprinkle with parsley and serve.
