1 tbsp olive oil
1 1/2 lb boneless, skinless chicken breast, cut into 1" cubes
1/4 cup chopped onion
1 cup chicken broth
1 can chopped green chiles, 4 oz
1 can white kidney beans (cannelloni) undrained. 19 oz
2 green onions, sliced
1 tsp garlic powder
1 tsp ground cumin
1/2 tsp oregano
1/2 tsp dried cilantro
1/8 tsp ground red pepper

Directions:
Directions:
1. Heat oil in large saucepan over medium high heat. Add chicken and onions; cook 4-5 minutes.

2. Stir in broth, green chiles and spices; simmer 15 minutes.

3. Stir in beans. Simmer 5 minutes. Top with onions. Garnish with Monterey Jack cheese, if desired.
