1 onion, diced
2 tbsp oil
2 eggs
2 large potatoes, diced
1/2 cup flour
1/2 tsp baking powder
1/2 tsp salt
pepper to taste

Directions:
Directions:
Scrub potatoes and dice. Into blender put eggs, onions and potatoes in that order. Turn blender on high and blend until the last piece of potato disappears into the vortex. Stop immediately and pour into a bowl. Add remaining ingredients to the mixture. Spoon onto lightly greased and heated waffle baker and bake according to maker's instructions, allowing a little more time than usual.

Serve with applesauce, sour cream, etc.
