4 medium potatoes (2lbs), peeled and cubed
2 large eggs
1/2 tsp salt
1/4 tsp pepper
1 large onion, quartered
1/2 cup flour or matzo meal
1/2 tsp baking powder
2 tbsp oil

Directions:
Directions:
Into blender container put eggs, potato cubes, salt, pepper, flour, baking powder, oil and onion. Cover and blend for 10 seconds until the last piece disappears into the vortex. Stop to stir down if necessary, but be sure not to over blend. Turn into a greased casserole and bake in a preheated 375 oven for 1 hour or until brown with crisp edges.

I usually do not peel the potatoes but scrub them carefully and substitute 1/2 cup of All Bran cereal for the flour for extra fiber and flavor.
