1/3 cup smooth peanut butter
1/2 cup boiling water
1/4 cup vinegar or rice vinegar
2 tbsp soy sauce
1 large clove garlic, minced
1/2 cup scallions, finely chopped
1/2 tsp cayenne pepper
3/4 lb soya noodles

Directions:
Directions:
In a bowl, mix peanut butter with hot water until smooth. Stir in remaining ingredients except for noodles and set aside. I generally do this in the processor or blender so it doesn't matter if the peanut butter is chunky. It will smooth out.

Cook the noodles in boiling water for about 3 minutes. Rinse, pour the sauce over and serve hot or at room temperature.
