4 large eggs
1 1/2 cups milk
1 tbsp lemon juice
salt and pepper to taste
4 tbsp butter, melted
1 medium onion, chopped
2 1/2 lbs thin skinned potatoes

Directions:
Directions:
In a large bowl beat the eggs. Stir in the milk, juice, salt and pepper, butter and onion. Peel the potatoes (or not) and coarsely shred. Quickly add to the milk mixture to prevent discoloring. Pour into a well greased 2 1/2-3 qt pan. Bake at 375 until brown and crisp, about 1 1/2 hours.
