2 1/2 lbs boneless lamb
1/4 cup butter or olive oil
1 medium onion, chopped
1 tbsp mint, chopped
1 tbsp parsley, chopped
1 garlic clove, minced
1 cup canned chopped tomatoes
2 lbs zucchini, sliced
salt and pepper to taste

Directions:

Cut lamb into cubes. Brown in fat with the onions. Add the tomatoes, salt and pepper, mint, parsley and garlic. Cover and simmer for 1/2 hour. Brown the squash slices in olive oil and add to the pot. Simmer for another hour, covered.

The squash tends to spatter when browning , so wipe them off with a paper towel before putting them in the hot olive oil.
